Yellow Cassava

Yuca Amarilla

Yuca, also called cassava, guacamota or casava, scientifically named Manihot esculenta, is the tuber of a perennial shrub of the family Euforbiaceae. This particular type of yellow yucca is found throughout the department of Putumayo, it is an ingredient that accompanies Putumayense dishes. It is usually accompanied with roasted meat, smoked cachama or smoked pork ribs.
